And now it is time for a little cake and coffee
Delicious Apfel Kuchen
In our social circle this is a favorite and I think we get invited to Potlucks just so we will bring it along. My husband is the chef here. Quite the good cook. And here is his recipe, straight from a cookbook his mother used when he was growing up. It has been modified for the new world cook who uses measuring cups and Fahrenheit.
Ingredients:
1 1/2 cups flour
1 teaspoon baking powder
1/2 pound butter (2 sticks)
1 cup sugar
4 eggs
4-6 apples, peeled and quartered (Macintosh and Empire work well since they soften as they cook)
Topping to sprinkle over the apples before baking
1 tablespoon Cinnamon
5 tablespoons sugar
Directions
Cream the butter with the sugar
Gradually add the 4 eggs and vanilla
Then mix in the flour, sugar and baking powder mixture and
beat until nice and smooth and fluffy.
Put the batter into a greased Springform pan about 9 or 10 inches in diameter
Arrange the apple quarters artfully on the top.
Bake in a 350 degree oven for 45-50 minutes
Sprinkle on the sugar-cinnamon mixture
Let cool to warm and serve with vanilla ice cream, or whipped cream or just plain
